The Manotick Village Butcher Philosophy
Quality and ethics are inextricably linked in the production of good meat, and are our fundamental principles.
We provide high quality, locally produced, ethically and sustainably raised meat that comes at a price that is fair
for the farmer, the consumer, us and the environment.
When we say local, we don’t mean that the distributor is local, we mean that the animals are raised locally.
The meat you get could very well be raised on farms you pass everyday on your way to work or other errands. But
we do the running around for you. We are working hard to bring you all the best local quality, conveniently and
at reasonable prices.
By ethically raised meat we don’t necessarily mean organic, but rather that the animals have lived naturally on
a safe and appropriate diet without unnecessary additives, spending almost all of their time, day after day, doing
what cows, sheep, pigs and chickens freely choose to do, as nature intended. We are concerned about this for several
reasons, not the least of which is that animals raised using these techniques provide much tastier meat.
It is important to us to know where our meat came from, what it was fed on, how it lived and how it died, how it
was stored, cut and packed, what was added and how far it travelled. Truly good meat comes from animals that are
healthy and in prime condition at the moment they are processed.
"The proverbial good butcher, a rare breed himself, but happily not yet extinct, will always be one
of the best people from whom to buy reliably good beef. This is largely because every butcher worth his salt
understands that beef must be properly hung and also knows what it looks like at its best. The very finest
butchers also care passionately about the provenance of their beef – they should be able to tell you the breed,
and even the sex and age at slaughter." ~ The River Cottage Meat book by Hugh Fearnley-Whittingstall
We believe in Respect. Respect for the farmers. Respect for the consumer. Respect for our employees.
Respect for the animals. Respect for our local food supply. Respect for the environment.
In our opinion it is disrespectful to the animal not to make the most of the whole beast; the best way to
honour and respect the animal is ‘nose to tail eating’. As a result you will be able to find a wide range of
different cuts available from us, as well as your much loved favourites, backed up by a staff that will be able
to offer advice on the most suitable cut for a recipe or the best cooking method for a specific cut.
We are a business with a purpose and our goal is to provide the best tasting meat, delivered to our customers
in a convenient manner. We believe that value is a rare commodity and we strive to provide value to our suppliers,
customers and staff. We are a traditional small village butcher and from us you can expect great quality, awesome
customer service, lots of extras and all at an affordable price!
